While on the first phase of the low FODMAP diet you can use leek leaves to replace onion. The leek bulb and lime green stem are where the FODMAPs are, so those need to be avoided until you know your tolerance levels to fructans.
We like to use leek leaves in cooked dishes like soups, stews, casseroles and stir-fries.
How much is low FODMAP?
Leek leaves are lovely in cooked dishes. We tend to use 1 cup of leek leaves to replace one small onion. While on the low FODMAP diet you can enjoy 1 cup (up to 100g) of leek leaves per serve. Check out the Monash University FODMAP Diet App for more information.
