Garlic infused oil is normally found in the oil section of your local supermarket or you can buy it online. It should be clear with no floating bits of garlic.
You can also make garlic infused oil at home by frying garlic cloves in cooking oil until they are golden and fragrant, then remove and discard the garlic before you continue cooking your meal. This is a low FODMAP way to capture the garlic flavour as the fructans can't leach into the oil.

- Place a small saucepan of hot water on to boil for the egg.
- Prep the carrot by peeling and slicing on a diagonal. Chop the end off the bottom of the bok choy/pak choy bunch so the leaves break apart. Finely slice the green leaves of the spring onion/scallion.
- Once the saucepan of water has come to the boil, pop the egg in the water. Boil for 5-6 minutes for soft boiled or longer for hard boiled. Set a timer. Once cooked, remove the egg from the pot and plunge into a bowl of cold water. Once cool enough to handle, peel and place to one side.
- In a small saucepan whisk together the stock, water, peanut butter, brown sugar, soy sauce, garlic infused oil, and pureed chilli.
- Place the saucepan over medium heat and bring to a simmer. Add the rice noodles and carrot and cook for 3 minutes. Then add the bok choy/pak choy and simmer for a further 1 to 2 minutes until the carrot and noodles are tender and the bok choy has wilted. Taste the broth and stir through more chilli puree if desired.
- Ladle the noodle soup into a bowl and sprinkle over the sliced spring onion/scallion leaves. Cut the egg in half and add to the top of the noodle bowl with a sprinkle of sesame seeds. We hope you enjoy this low FODMAP cheats vegetarian noodle bowl!
